“The group is famous for its use of the almost comically muscly Fassona beef, which is sourced from Piedmont in Italy and has unusually low levels of fat and cholesterol.

The Clapham opening will keep the group’s part restaurant, part butchershop ethos, with beef butchered and dry-aged on-site for ve to seven weeks.

It will also feature over 100 Italian wines hand-picked by founder Roberto Costa, who hails from Liguria, with a mix of popular and lesser-known varieties.”
