At Macellaio RC, we believe that the quality of a dish begins long before it reaches the kitchen. It starts with the land, the choice of ingredients and the care of the people who produce them. Our partnership with BF Group brings that belief to our pasta, connecting Italian agricultural heritage with the food we serve at our table.
Through Stagioni d’Italia, brand of the BF Group, we have chosen pasta made from Senatore Cappelli durum wheat: a historic Italian variety with a distinctive character and a story spanning more than a century.

A partner with roots in Italian agriculture
BF Group grew around Bonifiche Ferraresi S.p.A. Società Agricola, which, with 7,750 hectares, is Italy’s largest agricultural company by utilised agricultural area. From its origins as a traditional agricultural business, it has developed into a group that brings together farming, food production and advanced agricultural technology.
At the heart of its approach is the management of the entire agro-industrial supply chain. By connecting agricultural production with the food that reaches consumers, BF places value on traceability and a closer relationship between the land and the finished product. Its work also extends to supporting farmers with technologically advanced goods and services, bringing new knowledge and tools into agriculture.
For Macellaio RC, this connection matters. Understanding an ingredient’s origins gives greater meaning to what we prepare and serve. Our partnership brings the work of Italian growers and producers into the story of our menu.

Senatore Cappelli: a wheat with a history
Developed in 1915 by the Italian geneticist Nazareno Strampelli, Senatore Cappelli was once one of Italy’s most important durum wheat varieties. Over time, it was gradually replaced by modern varieties that offered higher yields, and it came close to disappearing from cultivation.
Its return reflects a renewed appreciation for the character and diversity of Italy’s agricultural heritage. Naturally tall, deep-rooted and lower-yielding, Senatore Cappelli is valued for its distinctive qualities and suitability for pasta-making.
BF has helped bring this historic wheat back, preserving its identity through certified, single-varietal seed and a fully integrated supply chain from field to table. This approach connects the preservation of a traditional variety with the care and traceability expected of contemporary food production.

Heritage you can taste
Through Le Stagioni d’Italia, Senatore Cappelli wheat becomes a pasta distinguished by its amber colour, aromatic flavour and excellent al dente texture. These qualities give it a character of its own and make it an ingredient we are proud to bring into our kitchen.
For us, choosing this pasta is about both flavour and provenance. It is an opportunity to share an ingredient whose story encompasses Italian farming, the preservation of a historic wheat variety and the knowledge that transforms it into something to enjoy around the table.
Our partnership with BF Group connects those elements, from the fields where the wheat is grown to the dishes we serve at Macellaio RC. It is a shared commitment to giving Italian ingredients, and the people behind them, a central place in the dining experience.

Butchery Masterclass
Led by the executive chef and head butcher, the three-hour class will begin with a history behind our meat, a lesson on the importance of timing and how to select, prepare and cook the best cut. Discover the power of wine pairing, sampling the various characteristics of the wines and flavours. Afterwards, you’ll be treated to a true taste of Italy with a three-course set meal against the backdrop of the dramatic and theatrical in-house butchery and bakery.

Tiramisu Masterclass
Led by our experienced Chefs and Bartenders, the class will begin with the history behind this classic Italian Dessert. Few people know that Tiramisu” is an Italian word which means ‘cheer me up’.
And that is exactly what our Master Class will do for you! Join us every third Wednesday of the month at Osteria del MacellaioRC from 5pm.
